CT dinner

Tonight’s dinner continued on the green trend – My salad contained spinach, romaine, heirloom tomatoes, avocado, pine nuts, almonds, and sunflower seeds. For dressing I did a simple mix of olive oil, lemon juice, and salt. Such an easy and delicious meal. I also snacked on 1-2 pieces of garlic, tomato, and onion bruschetta.

On the menu for the non-vegetarians was a salmon salad with quinoa. Charlie also grilled himself up a nice organic lamb burger with goat cheese, avocado, onion, and pickles. Drinks included a taste of some William Seylem Pinot Noir.

After dinner — and a lovely 1 hour PBS special on Pacific Humpbacks — Charlie and I dug into some unsweetened banana chips and grain-sweetened chocolate chips. Bananas and chocolate might be my absolute favorite combo.
