Happy Mother’s Day!

Once again, I was slacking on the posting front — I spent the weekend in NJ with Charlie’s family and didn’t bring in my camera for the meals. Oops, oops, oops.

Regardless of my lack of posting consistency (and the blustery northeastern weather!) today was a beautiful day.

I think tonight’s meal might make up for my absence these past few days — my mom and I made a mother’s day feast! On the menu was mushroom risotto with scallions and rosemary, steamed artichokes, and roasted asparagus.

I was in charge of cooking up the risotto…

…while my mom took care of the veggies and setting up the dinner spread (featuring my freshly bought bouquet of roses for the mom!)

Delicious!

After dinner it was time for a green smoothie – This one had milk, a banana, a spoonful of barney butter, and 2 large handfuls of spinach.

Now we’re watching a movie and then it’s time for bed. See you tomorrow for breakfast!
