Rough Night

Today has been a long, dramatic day  so I’ll keep this post short.

I am back at my apartment in the city — I drove in this afternoon and very happily found parking right on my street. That might honestly be the best surprise ever when you pull up and find a space.

At around 5 I had myself a tasty banana with barney butter to hold me over until dinnertime.

Then, at around 7 I decided to throw something yummy together for dinner involving roasted vegetables. I basically just started by roasting the vegetables and then watched to see what worked with them.

I ended up mixing them up with some meatless crumbles in seasoning and wrapping them up in a whole wheat tortilla with some cheese and hot sauce. It was actually really delicious and satisfying after a tough afternoon.
