Sleep!

Finally had a decent night’s sleep last night. Unfortunately I woke up to some serious eyelid swelling that I haven’t had since the very beginning of my lovely adventure with mono.

I battled these wonderful ailments with some goji berry green tea and soon afterwards, a nice cup of coffee with So Delicious Coconut creamer.

For breakfast it was scrambled eggs with a side of my mom’s homemade whole wheat toast. To make these guys I beat up 2 eggs and scrambled them in one pan while some spinach and chopped onions cooked in another. Then I put them together and topped them with some compari tomato quarters and scooped it all onto my beautiful dinosaur plates with a slice of oven-toasted bread.

Off to shower and prepare for my day.
