Well today has been an eventful (but totally gorgeous weather-wise) day so I set off this afternoon for a run/walk to clear my head and enjoy the warm, spring temperature.

Have I mentioned how beautiful I think New York City really is? I don’t think it gets enough credit…

After some getting some fresh air it was time for lunch! I knew I wanted salad today so I immediately set off to make a big bowl with spinach, tomatoes, broccoli, roasted veggies, meatless crumbles, black beans, chickpeas, and Annie’s shitake dressing mixed with toffuti.

I also finished the last few bites with a couple baked blue corn tortilla chips to add an extra crunch! See you for dinner — I’ll be in Southampton, NY tonight.
