Still sniffly

Well, I am definitely feeling better but I still have some congestion I will be happy to be rid of.

I knew tonight’s dinner was going to involve the broccoli I bought last week.

But first, before dinner I cut up a fuji apple and ate the slivers with some spoonfuls of Barney Butter. It was a great snack to hold me over after lunch and I like to change it up from my familiar banana combo every once in a while.

Then it was onto dinner!

I started it off by just roasting the broccoli with some olive oil, salt, pepper, and garlic and then ventured off to find a good supplement to go with it…

…and ended up with this broccoli, cous-cous, peas, and edamame with just a tablespoon of marinara sauce stirred in at the end. The final product was filling, nutritious, and really really good.

I paired my cous-cous with a small spinach salad with sliced grape tomatoes.

Time to put on comfy clothes, drink lots of water, and cross my fingers for tomorrow’s congestion status!
