Kodiak Cakes

Most mornings I wake up and am faced with a very tough decision.

Breakfast is definitely my favorite meal of the day. How could it not be? There are so many options! I love eating eggs, I can never get enough greek yogurt, and it’s the only meal that you can really incorporate sweet into the mix without feeling guilty about it. So while I’m setting up my french press in the morning, you can probably put a good amount of money on betting that I’m pondering which delicious combination to make to start my day. The decision whether to go for a more grain breakfast (oatmeal, pancakes, parfait, cereal) or the egg route (scramble, burrito, sandwich) is not taken lightly in this apartment and this morning was no exception….

…That is why today I broke the rules and mixed the two categories together!

Today we made a egg/veggie scramble with a side of kodiak cakes and the verdict was two big thumbs up!

The saltiness of the kodiak cakes worked super well with the cheesy eggs. I’m not sure this would work with regular pancakes that have more sweet going on, but I am definitely going to try this out again sometime soon.
