Sorry I have been so bad with posting — I’ve been stressed trying to figure out a routine with working this week and figuring out plans.

Anyways, let’s see where we left off….

Two mornings ago I made an awesome scramble with chipotle fake sausage, red onion, tomatoes, spinach, cheese, and 1 egg.

Served with a side of ezekial toast with earth balance spread! Mmmmmm.

Lunch that day was eaten on the go at work, so it was photographed as I was packing it.

It was a really really great salad with spinach base (of course), sliced campari tomatoes, sliced avocado, carrots, black beans, chick peas, sunflower seeds, and drizzled with a honey/olive oil/salt dressing.

Being stuck at work is just not as rough when I have a colorful and delicious salad like this to turn to.
