Crazy Salads

Today’s lunch was a crazy salad — it’s basically the same salad you’ll see me make most days, but I add even more contents of my fridge on top of it.

Today’s mix was spinach, avocado, tomatoes, carrots, red onion, black beans, chick peas, sunflower seeds, almonds, and crumbled crackers with a salsa and tofutti sour cream dressing.

After my salad was gone I decided I needed some more carbs and toasted up a slice of multi-seed bread with nature balance spread and raspberry jam.

Now to catch up with the weekend — On Friday Charlie and I decided to get some take out from The Green Bean Cafe and eat it in the park on a beautiful afternoon.

I got the raw taco salad — which looked to have a mix of romaine with quinoa and tempeh and veggies with sides of vegan sour cream and guacamole.

Charlie had the portobello burger — it was super good and I ended up stealing a few bites.

We each had an apple for dessert while we finished lunch and enjoyed the gorgeous day.

Now I’m off for my second run of the day — this time I’m headed for one on the river with my friend Alli. I’m already excited for whatever dinner will be afterwards!
