Tonight I made the best greek salad I think I’ve ever had!

Ok, so that might be a pretty big statement to make, but I did just devour what might be my new favorite meal.

My salad included cucumbers, red onion, campari tomatoes, spinach, avocado, and feta cheese with a dijon mustard, oregano, chopped garlic, and black pepper dressing.

I paired my awesome salad with a slice of toasted multi-seed bread and earth balance spread. Delicious! I’m definitely going to incorporate feta into my salads more often.
