Yesterday’s salad went something a little like this:

I love the colors!!!! Adding to the colorful mix was spinach, campari tomatoes, red onion, sliced fresh mozzarella, and some avocado, tossed in a balsamic vinegar, tofutti, and olive oil dressing.

Today’s salad was a multi-step process:

First, spinach and chopped cucumbers.

Then some chopped red onion.

Step three: Avocado.

Mmmm feta cheese…

Then I topped that base with chopped tomato sandwich slices from the grain harvest company, sunflower seeds, chopped cilantro, and a scoop of hummus.

Topped it all off with a dressing of chopped garlic, balsamic vinegar, and tofutti fake sour cream all mixed up together.

Salad perfection!
