Last week was my birthday week! The day before, we hit up an indian restaurant for some cheap lunch — I had the Vegetable Kurma and a side of naan.

Then we were off to Southampton for the night to eat some good food and appreciate how amazing the beach really is on a warm summer day.

Before setting off on our run, I made us an improvised Greek Salad.

It had romaine, cucumbers, black beans, shredded carrots, hearts of palm, croutons, sliced tomatoes, olives, and peppers.

Topped with a homemade dressing of olive oil, vinegar, ground pepper, and a tablespoon of ceasar dressing mixed in.
