Garlic + Onion

Those two combine to make some serious summations. Rather than discuss my breath with you, the one that I will choose to focus on right now is flavor.

Yesterday I constructed a mixed summer salad with chick peas, sliced tomatoes, celery, crunchy snap peas, red onion, and tofu.

To start, I just diced and combined the veggie ingredients a big bowl.

Then I set off cubing and cooking the firm tofu in a pan for about 5 minutes, just until it browned.

Then it was time to make the garlic dressing. For that I combined lots of garlic (about 2 cloves), the juice from one lemon, about 3 tablespoons of olive oil, a dash of rice vinegar, a tablespoon of dry cilantro, and sea salt and ground pepper to taste.

Once the tofu cooled, just add it to the salad and then pour the garlic dressing over everything and mix it up!

Delicious, filling, nutritious, and super flavorful! Just make sure you have some mouthwash on hand when you’re done!

“It’s an empowering idea. The entire goliath of the food industry is ultimately driven and determined by the choices we make as the waiter gets impatient for our order or in the practicalities and whimsies of what we load into our shopping carts or farmers’ market bags.” - Jonathan Safran Foer ..............................................................
