Summer Sandwich

After heavy deliberation over my gym future last night, I was ready for a tasty dinner sammitch to comfort my conflicted belly.

The line-up was two slices of awesome Wave Hill Bread — which is handmade right nearby in Wilton, CT! — with a slathering of my mom’s great homemade pesto, a thin slice of fresh mozzarella, some sliced home-grown tomatoes, and a handful of spinach.

I considered grilling this up panini-style, but tried a bite cold and it was so refreshing as is.

I rarely hit up sandwiches for dinner, but I must say they are a comforting end to the day. I will have to make this combination again.
