dinner tonight.

i was excited to get most of my range of motion back, so i made stuffed zucchini, easy “calzones”, and a side of steamed asparagus. served to two.

it all started with hollowed zucchini.

i just used a spoon to scoop out all the guts.

then i cooked up some chopped onion, mushrooms, and zucchini guts.

once it’s brown, scoop it into the zucchini shells.

salt that up. pepper. red pepper flakes.

cover those babies up with some foil. pop ’em in the oven for 30 minutes at 375*.

then make these:

while that’s cooking, slice up veggies.

lots of them.

into the pita they go. with cheese. on a baking sheet. you can put some spicy tomato sauce too.

cook those for about 10 minutes at 375*.

take the foil off of these guys after 30 minutes and put them back in, uncovered, for at least another 10 minutes.
