spicy pad thai stir fry

this is awesome.

here’s what you’ll need to accomplish it:

4 oz. pad thai rice noodles

2 tbsp. of sesame oil

1 clove of garlic, chopped

1 inch of fresh ginger, peeled and chopped

1 onion, thinly sliced

2 carrots, chopped

2 celery stalks, chopped

8-10 crimini mushrooms, chopped

1 jalapeño, finely chopped

2 cups sunflower sprouts

1/4 cup soy sauce

fresh squeezed juice of 1 lime

2 cups chopped cashews

cook the noodles in a large saucepan of boiling water for about 5 minutes. drain them and cool them with cold water. set aside.

heat the sesame oil in a wok, saucepan, or pot and add the chopped garlic, onions, and jalapenos. cook for at least 5 minutes until softened. appreciate how amazing the room smells while that heats up.

add the mushrooms, carrots, and celery. cook for a few minutes until softened.

add the sprouts, cook briefly.

add the drained noodles to the pot and combine. add the soy sauce, lime juice, and cashews. mix well.

eat it.

be prepared to sweat! if you don’t like spicy, you can either omit the jalapeño altogether, or just use less.

ginger + spice + soy + sesame + veggies = so so so good
