simple bean salad

you know, for those days when you’re too lazy to throw anything else together and the alternative is just eating a loaf of whole foods pretzel bread. which you end up eating anyways. but you also eat the legume salad. so that’s good.

here it is:

can of red beans (or pretty much whatever you’ve got)

can of chick peas

carrots, diced

cherry tomatoes, diced

scallions, chopped

red onion, diced

feta cheese, diced (optional)

garlic, minced

red wine vinegar

olive oil

lemon juice

salt

you know the drill. combine to your liking and enjoy!
